Serving Northwestern students locally grown food isn’t at the top of the menu for NU dining services.
NU serves some local grub, such as milk from the Illinois-based Prairie Farms and sweets from Evanston-based Tag’s Bakery, 2010 Central St.
Tag’s Bakery has supplied “pokies” – sugar cookies with large M&M-like candies across the top – and other pastries to NU for more than 20 years, co-owner Gretchen Vetter said.
But supplying NU students with local nourishment is not a priority, said Paul Komelasky, the nuCuisine regional district manager.
“We have not gone out and said, ‘We want to buy strictly local,'” Komelasky said. “I don’t think it’s high-importance.”
